"Sushi" Salad recipe

This salad is good for cholesterol and for losing weight. Read the ingredients, and you'll see what I mean! It's low carb, and fiber, magnesium, calcium and good fats abound! Ingredients: 1 cup dry white quinoa, 2 Tbsp rice vinegar 1/2 tsp xylitol (or white sugar), 1/2 English cucumber, halved lengthwise and then halved again, 1 avocado, cubed, 1 handful pickled ginger, minced, 4 or 5 large sheets seasoned nori, cut into small squares with kitchen shears, 1 large packet smoked salmon lox, cut into bite size pieces, 3 green onions, minced, 1 big handful black sesame seeds. Cook up the quinoa like you would sushi rice, with 2 Tbsp vinegar and 1/2 tsp sugar for every cup of dry quinoa. While that's cooking, prepare other ingredients and throw them in a mixing bowl. Once the quinoa is cooked, remove from heat and let cool. Add to mixing bowl and fold with other ingredients until thoroughly combined. Serve with sodium-reduced soy sauce and wasabi. If crazy about wasabi, add desired amount to the quinoa while it's cooking. Serves 2-3 people as a meal, but works as a glamorous side dish as well.

I found a similar recipe and the calorie count was approximately 70 calories - 6 mg of cholesterol.
