Here's the deal. I ran out of insulin over a week ago, I have taken 30u/day of Lantus for 3 years. So, having been out for so long, my blood sugar has remained comfortably normal. Never exceeding 130 or lower than 80. Does this mean I should just quit taking insulin until I have some kind of trouble?

How about...discuss this interesting result with your doctor?

I would guess that it depends a lot of your level of activity and what you've been eating.

I think waiting for "trouble" is pretty chancey.
