My question is why would my meter give me a reading of 158 when I know that it is much lower and then retest a few seconds later and it will only read 103?

Could be several things.

1. Maybe a bad strip.

2. Bad blood sample.

When taking a blood sample, don't take the first drop. Wipe that off and take from the second sample. Many times the first drop is contaminated with tissue and lymphocytes.

When they test in my doctors office using finger pricks, they never take from the first drop of blood.

Make sure your meter is working properly by using the test control solution for one test.
