Im from Milano and ive 2 suggestions about suject:
1. When we do the soffritto we add garlic to the hot oil and remove it when its gold not brown or you can add the tomatoe but still when the garlic is gold.
Othrwise there is no flavor
2 we also use black kalamata olives and basil
