Make Your Own Low Fat Peanut Butter

Hi everyone. Make sure to read my recent blog on Everyday Fitness with Dr. Pam Peeke entitled "Grateful for Fruits and Veggies". I describe my trip to the Miraval Spa Resort where I was part of the More magazine women's retreat. Chef Chad was kind enough to share his recipe for hiis smooth and scrumptuous low fat peanut butter. It's heavenly. Give it a try!

Serving size = 1 tbsp

Per serving
Calories 36
Total Fat 2.75g

Peel and rough chop raw carrots; boil or steam until the y are soft and fork tender.

Combine carrots and peanut butter in a food processor and puree until well blended.

May be refrigerated for up to a week.

Hi Everyone,
I was a lucky girl and experienced Chef Chad's cuisine at the Miraval Spa resort. I discovered healthy food when prepared well can actually taste good vs the wallpaper paste taste of many commerical "healthy foods". I love PB and Jelly on anything so I was thrilled to taste and enjoy Chef Chad's low fat PB. Instead of tasting lots of sugar and salt, you can really taste the PB flavor. Give this a try folks. Your taste buds will be pleasantly surprised.

I too have been lucky to enjoy Chef Chad's delicious food! For this recipe make sure the ratio is 3 to 1 carrots to creamy peanut butter! The flavor is yummy! Great way to start your workouts!

Hi you two. Thanks for your feedback. As you know, I love peanut butter as a snack, especially before during and after long workouts. I'm always looking for creative ways to prepare it and so far Chef Chad's is my new favorite. Thanks for refining the recipe to keep the ratio of carrots to peanut butter at a 3:1. You can actually play with this any way you want to, and achieve the taste you want.

I was disappointed that there were no quantaties listed; but I see they are in the comments.

3 to 1 would translat to 1/4 C peanut butter to 3/4 C cooked carrots if that helps
