Having a late lunch today. I am doing a mix of squash, zucchini, bell peppers, and jalapenos. I am frying it in low fat / low cal butter instead of oil. It's much lower in calorie and tastes much better too.

I didn't at that point but I had a high protien breakfast and we had a very high protein dinner so it more than made up for it. Although you mentioning that gives me an idea. I am thinking of addin bacon bits or spam next time to it.

Maybe adding a lean protein like egg-whites, chicken breast, cottage cheese, yogurt,beans, tuna or salmon? That would be more nutritious and less processed than spam or bacon.

Sorry, but egg whites? that's just gross. I do the whole egg. I love my yolks. The other suggestions are good though. If you like the egg whites, I mean no offense. It's just that I find just the whites bland. I've eaten the yolks my whole life and it's never really made a difference in my coloesteral. But like I said, if you like it keep eating it that way.
