Lettuce wrapped sandwich recipe ideas for our newest member

I dont really know if Marybeth 2 ( gotta call her that, because we already have a Marybeth), lol, likes lettuces but here's a link that I found for some ideas for sandwich stuffers for those wonderfully NON BREAD hand held meals.
Late last summer I canned a ton of Apple/Pear butter and had no idea how to eat it all up. I figured it'd be something that my BF would like only to find out, that, no , I'm on my own. So a couple of weeks ago, I had some of my oven baked chicken tenders leftover and wrapped them in lettuce leaves, then I dabbed on some apple butter and sprinkled it with some raisins...... YUM! a star was born!
I am a person that likes fruit in my sandwiches, like chunky chicken salad, and turkey with apple slices so this was right up my alley.
Anyone else have a few lettuce wrap ideas to share for our newest member who is a sandwich junkie???

Hi Kim almost any sandwich filling can be wrapped in a leaf of lettuce therefor avoiding all that bread. I like chicken or tuna salad in lettuce wraps

You know , I was just thinking about my love of egg rolls too. I'd bet that you could take a regular eggroll filling and use a blanched till just tender cabbage leaf to roll it in. Since cabbage or bok choy is a main ingredient in most eggrolls, you could save tons of calories and fats doing this.

Sounds very good.

I don't tend to wrap the fillings in lettuce leaves, but eat the lettuce on the side, or put the "filling" on top of the lettuce which I spread out on the plate. Probably because it looks like more food then, and takes longer to eat!

I think I would like a filling of chopped hard-boiled egg mixed with a little salsa, fresh parsley and finely chopped onion.

Since the quality of Romaine lettuce has really improved, I use this as "bread". I get a variety of cheeses and a slice of turkey or chicken breast, a squirt of mustard, a slice of pickle and some red pepper flakes. This has been my "sandwich" go-to.

Saves on carbs!

I understand those little butterhead heads are good too for this. But they are harder to find than romaine.
