Good morning Ladies
weigh in 151
breakfast:
2.8 ounce orange

oatmeal cooked in ff milk honey cinnamon a drop or 2 of vanilla
topped with 1 T peanut butter and 6 dark chocolate morsels
it was yummy
1 C black coffee nothing added
Dinner will be maybe chicken breast since today is shopping day I usually buy spinach for today but it could be asparagus
I will have a side salad today I might cook one of the butternut squash from my garden that is no longer producing anything frost came along and ended that

Breakfast: Kashi cereal with ff milk, black coffee
Lunch: large salad (spring mix) 2 tbsp. balsamic vinaigrette
Dinner: broiled chicken breast, green beans, 1 red potato
Snack: apple and walnuts

I always forget to post what I drink. I start out with coffee in the morning, have water, green tea, the occasional diet sprite (I know, I know)

Will walk today. Am meeting with the rehab people about my sister's care this afternoon. Hopefully, we will get a clearer idea of how long she will be there and what to plan for.

Tomorrow will be our first taste of fall here - highs only expected to be in the 60's. Still no frost expected.

Still on the plateau in spite of cutting carbs down to the amt recommended. Grrrr. I am sticking with it. My #1 son and husband are going to join me on the diet. WOO hooo!!! I am so thrilled. #2 son says he doesn't need it and truly he is only 10-20 lbs over. This is great. There will be no bad stuff in the house. If #2 son wants bad stuff, he will get it and keep it outside the house.

4 slices bacon
3 eggs
1/4 cup salsa RED

romaine lettuce GREEN

Hello. Haven't been on in a couple days and really want to start posting regularly again.

Breakfast was oatmeal and a medium apple.

Lunch was 1C cottage cheese and 3/4C diced tomatoes, and a salad w spinach, baby carrots, cherry tomatoes and lite dressing.

Dinner will be 6oz chicken breast w mushrooms, Lima beans and 1C brown rice.

Snack will be a lite yogurt cup and 1C purple grapes.
Rachael...under construction.

1.33 C cooked spinach from fresh green
1/2 c butternut squash yellow orange

side salad
mixed greens green and purple
tomato red
red onion thin slice red
radish red
bell pepper yellow
1 hot pepper
5 black olives
1 T wish bone robusto
1 t red wine vinegar

1 C green tea with lemon yellow


1 slice whole grain bread
6 slices dill pickle
chicken left from my dinner made a half sandwich


5 cups air popped popcorn


that's it so far today

Dinner was

6 oz. pork chops
1 cup broccoli
2 cups beef consomme
1 T. A-1 sauce

1200 calories
53 gms. carbs

I have been tempted all day but so far have toughed it out. Hope I see a lower number on the scale tomorrow.

This is a recipe that my husband and me created. I don't think they are too fatten.

1 lb lean ground beef, browned with 1 yellow onion, drain grease. Add 1 can low fat/ff cheese soup, 2 cups cooked brown rice.

Heat about 1 cup of olive oil in fry pan, put corn tortilla in oil until it bubbles then flip, it will be hot. Fill corn tortilla with about 3 tbs of filling, roll, place in pan. When filling is gone cover enchiladas with enchilada sauce then low fat grated cheese. Black olives are optional. Bake at 350 for about 30 minutes depends on oven.

You can adjust the ingredients as you feel fit. I have a friend who's husband does not like Mexican food so you made this and froze part of the batch. She said they taste just as good thawed and microwaved. The are very YUMMY. My adult kids have no idea I use low fat/ff ingredients. Yet again they don't have to worry about it the are all thin as pencils. Very high matabolism. HUGGS Jean

Hi Jean I used to make mine with enchilada sauce ground beef and refried pinto beans I would soften the corn tortillas in the enchilada sauce when they were soft I would fill with the cooked ground beef and pinto beans roll them and pour the sauce over them bake in the oven then add grated long horn cheese over the top bake a little more to melt cheese
I would top these with shredded lettuce when serving
they were pretty good but need to cut some of the fat out
maybe I can figure a way to make them with less calories
