    Egg substitue for baking

    You can substitute ground flax meal for egg in any recipe. Just mix one Tablespoon flax with three Tablespoons water for each egg in the recipe. This is especially tasty in bread and muffin recipes, and adds a nice shot of Omega-3s and whole grains to your dish.

    Good idea! I bake for someone who is always trying to cut down on fats and therefore uses only egg whites. I'll try the flax meal and water substitution for some of the whole eggs!

    If you are making something sweeter then you can use 3 Tbsp unsweetened applesauce plus one teaspoon baking powder for each egg...but in any recipe I would not sub for more than 2 eggs.

    Yup. Use unsweetened applesauce to keep the sugar content down.

    excellent! thank you! his birthday is coming up, i tried to make the Cherrybrook Kitchen cookies for him, they turned out horrible so now that i understand the apple sauce trick, i have more options!

    If I understand this correctly, seeit2 says the unsweetened applesauce/baking powder substitute makes the item sweeter. But what i don't understand is seeit2's response to KatieS83 which says the unsweetened applesauce is used to keep the sugar content down. I am diabetic, and I wonder if you're trying to make the iterm sweeter. Or are you trying to keep the sugar content down?

    The applesauce is always going to be sweeter than the flax. Unsweetened applesauce has less sugar than the applesauce with sugar added. But I get the inconsistency you noted.

    Also, Catherine, you would not want (too much) flax in your cookies or cupcakes - thus the applesauce. I would recommend the flax in more bread-type recipes and applesauce in everything else.
