It's hot outside and it's hot in the kitchen. I love the summer, but I do not love cooking over a hot stove!

I'm thinking of nice hearty summer salads drizzled with homemade dressings.....

One of my favorites is a Romaine, Apple, Red Onion, Goat Cheese, Sugared Pecan Salad with a Maple Vinaigrette.

Maple Vinaigrette - Whisk 1/2 c. cider vinegar, 3 T. REAL Maple Syrup, 1 1/2 T. Dijon mustard, tiny bit of salt and pepper. Slowly whisk in 2/3 c. olive oil until emulsified.

Here's one I love:

1/2 Avocado, 1 lime - squeeze juice fresh, dash of cumin, dash of cayenne, dash of sea salt, 1 drop of stevia. Mix together and enjoy.
