Recipe Swap! Are You Ready for Some Football Snacks?

Football season is here, and whether you are a sports fan or just doing some more entertaining this time of year, the snacks come out!

Do you have some healthy snack recipes to share? Something to munch on without thinking about the calories and yet delicious?

I make this often for a Sunday snack


1/2 cup finely chopped yellow summer squash
1/2 cup very finely chopped broccoli
1/2 cup very finely chopped and seeded tomato
4 teaspoons fat free Italian vinaigrette salad dressing
1/3 cup garlic hummus
Reduced Fat crackers


1. In medium bowl stir together squash, broccoli, tomato and salad dressing.

2. Spread hummus on a reduced fat crackers. Spoon vegetable mixture on top of hummus. Arrange on serving tray. Serve immediately.

Did someone mention football?

It's after 10 pm here and we are getting ready for tomorrows tailgate. Since our game begins at 12:30 p.m. we are planning a pre-game and post-game spread.

Pre-game: (Warning: Not Healthy! Note to Self: Watch Portion Sizes!) French Toast Casserole, Hash-brown Egg, Canadian Bacon Casserole, Fruit

Post-game: Sun-Dried Tomato, Smoked Mozzarella, Chicken Pasta Salad, Water Rolls, Veggies & Dips, Pirate Booty (requested by my 7 year old), Orange & Blue Cookies

Pasta Recipe -

2 cups tubular pasta
1 pint grape tomatoes - halved
1/4 c olive oil
2 Tbs red wine vinegar
1/4 tsp salt and pepper
1 minced garlic clove
Pinch of oregano
8 oz smoked mozzarella - cut into smallish cubes
6 (or more) sun dried tomato halves packed in oil, blotted dry and minced or small chop
2 TB chopped FRESH basil leaves
6 - 8 oz chopped cooked or grilled chicken

Pasta just beeped. Off to cool it down and add everything but mozzarella and basil. Will add before heading to game.

I make a "salsa" of sorts. I don't have an exact old co-worker's mother had made this, and I just tried to copy

black beans (can - rinse and drain)
petite diced tomatoes (or fresh if you have them)
red/green/yellow/orange peppers (whatever you like, for color and flavor)
Onion (spring onions, white, purple - whatever you want/have)
frozen corn, thawed (I prefer white corn)
avacado - chopped
fresh cilantro - chopped

I mix it all up, add garlic (powder and/or fresh), cumin, pepper, sea salt and a bit of onion powder. Mix again and let set overnight for best flavor infusion.

Sorry I don't have measurements...I just sort of make it with what I have....and I make it to my taste buds, so I add lots of cilantro, avacado and garlic!!

Great for crackers, tortillas, and even on a baked potato!!
