    What is Fuhrman's opinion on vitamin K1 vs K2. Evidently there are studies which show K1 does nothing as far as preventing heart disease but it is K2 that is preventive. However, K2 is found in natto and sauerkraut, two foods that people don't stand in line to eat, and things like salami, cheese and other meats. So it seems the very things we assume cause artery blockages are the foods that some studies have shown contain K2 to prevent heart disease.

    Any comments? Evidently we do not convert K1 to K2 very efficiently.

    Sauerkraut is simply finely sliced fermented cabbage, so I assume when we eat cabbage we get the K vitamins. Don't know about the conversion of K1 to K2.

    In many of the studies I have read supplementing vit K1 does not provide benefits while supplementing vit K2 does provide significant benefits in a number of areas.

    This does not necessarily mean the same thing applies to K1 when it comes from food.As we have seen vitamins from food are often much more effective than pills.

    We all agree that the best nutrient source is food. However, Dr. Fuhrman agrees that K2 is a valuable supplement, and includes Vitamin K2 (as natural menaquinone-7 (MK-7))
    30mcg in his Gentle Care supplement.

    I think that we have a great deal of variation, person to person. Iron is an excellent example. Men, and women who are not menstruating, should not take iron supplements. Multivitamins years ago, all contained about 18mg of iron, but today they usually contain no iron. It was discovered that many people were getting an iron overload from multivitamins, and it was very toxic. But, some people do not absorb iron well, and suffer from anemia, and need iron supplements, with far more iron than any diet could supply. This is just an example of variation, person to person.

    DHA is another example. We convert ALA to DHA, but as we get older, many people do not convert ALA to DHA very well, and benefit greatly from a DHA supplement.

    B12 is another example. Some people on the SAD are B12 deficient, even while eating meat at every meal.

    Some vegans may be deficient in Iodine, zinc, selenium and others. This is not a problem with the vegan diet. Many people are deficient of these nutrients while on the SAD. It's just person to person variation, and a justification for a supplement, even while hopefully on a "perfect" diet.

    Hi Folks,

    Good to see a discussion on vitamin k. I started taking vitamin K2 about a month ago. So far no noticeable changes, neither good nor bad, to mention here. I will let you know if I see any changes that I think is due to Vitmain K2.

    I believe I get enough Vitamin K1 from green leaves every day.

    I think I felt a difference in my workouts when I added an ounce or two of tofu, daily. Some recent studies have shown soybeans to be as balanced, as a protein source, as animal protein, for humans.

    After eating kale smoothies (lots of home grown kale) for years I went to see the ophthalmologist for an eye exam. He peered into my baby blues and said, "Your eyes are in excellent health." If I was thinking I would have asked, "What do you see that makes you say that?" I still need glasses though. Hmm . . .

    Hi Hanawaiman,

    "amazingly healthy eyes" is a wonderful thing !! It is typical to have deterioration of our capillaries, as we age. Eye doctors think it is a normal part of aging, because that is what all their patients exhibit. But it is really a typical result of years of high calorie, low nutrient food, the same stuff that makes heart disease, diabetes, hypertension, dimentia, alzheimers, allergies, autoimmune disease, etc.

    Your very healthy eyes mean you are eating very nutritious stuff, certainly to include kale, but also more. Also, you are excluding most of the bad stuff (sugar, white flour, oils, excess meat and dairy). You are a champ!! The eyes are very revealing!!

    Talking about amazingly healthy eyes, my eyesight has improved by 1 point. Back in 2004 my test results were -4.0 and -3.75 for the left and the right eye. Latest test results show that both eyes are now at -2.75. This is before starting on vitamin K.
