Beans or Lentils

I have been almost forcing myself to eat my cup of daily beans. But since I have discovered lentils it hasn't been a problem. I put lentils in my pancakes and smoothies. It is easy to eat 2-3 cups of cooked lentils per day. My questions: can lentils be substituted for beans on a daily basis? I sure hope so because my new smoothie recipe, few walnuts, flax seeds, 2 frozen bananas, 1 cup cooked lentils (French green ones), ~ 2 cups low/non fat soy milk, blueberries. Toss all but the berries into the trusty ol' Vitamix and blend away. After everything is mixed well, toss in the berries and just barely mix. When you drink you get chunks of blueberries that are so good.

Lentils are a legume and hence a bean!

Soak 1/3 cup lentils overnight, drain and rinse well. Equals about 1 cup cooked that way

Put in Vitamix and start on low, gradually increasing speed and adding tiny amts of water until you get a very thick batter, like for a quick bread. Can add 1/2 tsp baking powder if you wish. Also, any herbs I just did one with 1/2 tsp each of Italian herb blend, basil, oregano.

Pour/scrape w/ spatula onto parchment paper on a cookie sheet and bake at 350 for about 10 minutes. Flip it over and remove paper and put back in oven for another 5 minutes or so. Eat as is, sort of flat bread, or smother in "pizza toppings" and put back in oven for 5 min

toppings: pizza sauce, sauted or raw onion, mushrooms, zucchini, bell pepper, roasted or raw garlic, etc...

Does not do well in bread pan as is but the flat bread is quite nice!
