Given potential problems is it better to have separate surgergies and have 1 knee replaced and then the 2nd? and do medical plans pay 2 times?

You are much better off having one knee done per setting. You significantly increase your complication risks. Plans will pay for 2 surgeries as it is the standard to do 1 at a time.
