Sunny and nice here in WNY today. Going into the 70's, then t-storms expected for tonight.
I'm planning to make enchiladas for lunch today. I take 4 frozen beef&bean burritos and put them in a baking pan that has been prayed with cooking spray. I put about a cup of jarred salsa over them, then put on a 1-pound package of shredded monterrey jack cheese and bake for 1 hour at 350 degrees. I serve this with sour cream and guacamole on the side. I'm thinking of getting yellow rice and making that as well, but that spikes by blood glucose so I'd have to be very careful on the portion size.
