Tailgate Kielbasa

DH loves this one and its SUPER easy, all you need is two rings of Kielbasa, 2 cans of Jelled cranberry sauce and a crock pot.

So open the cans (both ends to make it easier to slide out) and empty into the crock pot.

Cut the Kielbasa into 1/2 coins, I do it on the bias they look prettier

Dump meat into the crock pot and mix, and yes it looks like crap

Turn the crock pot on High for 2 hours, or low for 4 hours, stir ever hour or so.

Sauce will melt completely and the meat will transform the flavor.

I modified this a little. I added brown sugar to the cranberry sauce, and cooked on high for two and a half hours.

I then made some whole wheat pasta, adding cinnamon and sugar to the water as it boiled. I cooked the pasta al dente, and then put it in the crockpot with the kielbasa, letting it sit for fifteen minutes, really stirring it in.

Turned it into a meal rather than a side or an appetizer. My s/o, who hates cranberry sauce, loved it! I added a little bit of chilli powder to my bowl to give it a little kick, and I was surprised at how delicious the chilli was with the cranberry.

I haven't had Kielbasa in about 100 years (my heart doc would have a stroke)...always liked it super simple...just the kielbasa and sourkraut, and I'm good.

Here in NY we have a local item known as Croghan Bologna...made in Croghan, NY. I don't think they sell it outside their local area, but it's highly addictive...it looks like kielbasa, but doesn't have to be cooked....about the consistency of something between regular bologna and pepperoni...tastes like neither. When we do find it available, we always get two rings...one just doesn't cut it.
