Cdjd, I have type 2 diabetes, diagnosed in March 2007. Definitely increase your intake of vegetables and beans. Everyday, and sometimes for more than 1 meal, I like a big salad with chopped lettuces (green leaf, romaine, red leaf, a splash of iceberg for the crunch) chopped carrots, radishes, red cabbage, a bit of crumbled feta or Gorgonzola cheese, maybe a sprinkle of bacon bits and topped with a lot of beans. You can use garbanzo, black beans, kidney beans, etc. I then mix in a small amount of dressing. It's wonderful and healthy.
Try to stay away from breads, especially white breads, white potatoes, white rice. It would be good to try to keep your intake of carbs to not more than 40 grams per meal and maybe 15 grams per snack.
I chuckled at your aversion to fish while you're pregnant. I remember when I was pregnant with my first child, if my husband would cook any meat I'd hide in my upstairs bedroom, in the bed with the covers over my head to avoid the smell. LOL
Also, please note that those who have gestational diabetes have an increased chance of developing type 2 diabetes later in life. It will fare you well to try to maintain an ideal weight and eat healthy as a permanent lifestyle. Please don't feel I'm judging you as I am still working on the "maintain ideal weight" for myself. I have a ways to go yet. :silly grin:
