Grown Up Grilled Cheese

This is a super simple but super delicious recipe!

What you'll need
  • A few Tbs of sundried tomato pesto
  • Smoked sliced Gouda cheese
  • Bread of choice (artisan or hearth bread is ideal)
The preffered method is a pannini press although a George Foreman Grill works great. If you dont have either a skillet will work just fine. Spread bread lightly with melted butter or olive oil, whichever you prefer. Place in the press for 2 min (if using skillet use med heat and cook for a min and a half on each side) until cheese is melted and bread is slighlty crispy. Ta-Da! lol

This is a perfect lunch or light dinner. Goes well with soup and pasta salad

Sounds great! I actually had grilled cheese last night, wanted to use up some left over Brie and I had roasted red peppers. Can't wait to try yours!

Yummy! I have sandwich recipes galore, I worked at this posh bakery/cafe for about 5 years and the owner and I were friends so we would always work on the menu together.. Swordfish sandwiches, falafels, hummus wraps, you name it we had it lol... This one was very popular..
