Pumpkin Spice Pancakes

I experimented last night. I ran out of milk so I subsituted coffee creamer.

2 cups Bisquick
1 cup of Pumpkin Spice creamer
1/3 cup water
2 tbs sugar
1 tps vanilla
1 large egg

Mix the ingredients together. The batter may be too runny for your liking. It was for mine. I added more Bisquick to make the batter thicker. After batter is mixed pour out on a hot griddle or pan.

***The pancakes weren't light and fluffy. They were more dense and cake like. They were good and like I and I couldn't make them fast enough for my daughter. It's also missing something. Im thinking I might want to use cinnamon butter or add walnuts.***

I always think pancakes taste better with brown sugar instead of white granulated sugar. Just my opinion.

I used Splenda. I might try the Splenda brown sugar and see if that helps.
