Hot Ham & Cheese Pannini

This was the best selling sandwich at the resteraunt next to her Grilled Chicken Salad sandwich.

You will need
sliced ham
sharp cheddar cheese
spicy apple chutney
simolina bread

To make the chutney combine baked cinnamon apples ( the type you would have with breakfast) and a pinch of red pepper flakes. Spread ham on bread top with chutney followed by cheddar cheese. Spread w melted butter and place in press (again George Foreman works well) until melted and crispy. Goes well with sweet potato chips

Hmmm yum. What would you sub for the semolina bread if it's unavailable?

I think anything would be fine as long as its a mild bread, I wouldnt recomend rye or anything like that. The only thing I stress is that hearth or artisan breads are key to these paninnis. You want the crust and sturdy texture.

My mom made a tasty chicken salad recently with leftover grilled chicken, green grapes, canned pineapple chunks, and a touch of curry powder blended with Hellman's. A recipe she had in her box for over 30 years, but never got around to trying!

What was the in the grilled chicken salad at the restaurant where you worked?

Its a pretty basic chicken salad sandwich it was just her method of preparing chicken that made it different. She would grill the chicken for a few minutes before she put them in the oven to finish baking. Then instead of cubing she shredded the chicken. The grilled taste really set it off.
