I love chicken taco's. I just put 3 bonless chicken breast's on the bottom, sprinkle a little garlic powder on top and then pour a jar of salsa in (usually a medium size jar..enough to lightly cover them) and just let it go. I usually cook it while I am at work so i let it cook on low for 9 hours or so and when I get home I just shread it up with a fork.
I also do chili and soup in the crock pot, however when I do that I brown the ground meat the night before.
For the chili I use 1 package of gr. meat, 1 can of beef broth, 1 or 2 cans of kidney beans ( I rinse mine) 1 can of rotel, and 1 can of crushed or diced tomato's (the large can), and chili powder to taste, again I let it go all day while I am working. I dont always add the whole can of beef broth it just depends on how thin I want it. I have a chicken cury one too, let me know if you want that one...I have to look it up at home.
